And honestly, it is a beautiful craft.<\/p>\n<p>But behind the show is real work&#8230; long shifts, physical exhaustion, unpredictable income, time away from family, and a constant awareness that no matter how skilled I become, if I stop working, the income stops too.<\/p>\n<p>For years, I accepted that reality. I believed this was simply the price of survival. I worked hard, sent money home when I could, did everything &#8220;right&#8221;&#8211;yet I knew deep inside something was missing.<\/p>\n<h2>Starting Over<\/h2>\n<p>When I came to America, I faced enormous obstacles. English was not my first language, and communication was one of my biggest early struggles. I taught myself English step by step through listening, speaking, reading, and writing, pushing through embarrassment and frustration.\u00a0 Every new word felt like lifting a small weight&#8211;difficult but empowering.<\/p>\n<p>I didn&#8217;t have mentors or shortcuts. Everything I built was through persistence&#8211;burned hands, long nights, quiet moments alone asking myself.<\/p>\n<p>Is this really all life has for me forever?<\/p>\n<p>The kitchen taught me discipline, consistency, and price in craftmanship. Being a hibachi chef also gave me the courage to talk to people, entertain strangers, and stand confidently in front of a crowd. Those skills didn&#8217;t just shape my career&#8211;they shaped the person I became.<\/p>\n<p>But eventually, I reached a turning point.<\/p>\n<h2>The Question That Changed Everything<\/h2>\n<p>I turned 55 years old, and a heavy realization hit me:<\/p>\n<p>&#8220;What happens If I can&#8217;t stand at the grill anymore?&#8221;<\/p>\n<p>Hibachi is a physically demanding craft. It requires agility, voice strength, stamina, and endurance.<\/p>\n<p>No one performs at this level forever. And I understood something critical:<\/p>\n<p>Trading time for money has an expiration date.<\/p>\n<p>The fear wasn&#8217;t about being poor&#8211;it was about living a life where the only option was exhaustion until my body said &#8220;stop.&#8221;<\/p>\n<p>I looked around and saw many chefs older than me still struggling, still living week to week because work never becomes ownership.<\/p>\n<p>I didn&#8217;t want that ending.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Welcome to my blog!
